(Cooking Time: 20-30 minutes)

Tahdig with Pita Bread

Ingredients

- 1 pita, whole or torn into large pieces

Directions:

1. Make White Rice as in recipe directions through Step 4.
2. Place pita into saucepan after adding oil (or butter).
3. Place a clean dishtowel or paper towel over the saucepan and cover firmly with lid to prevent steam from escaping. Cook for 3 minutes over high heat.
4. Remove lid and towel. Drizzle rice with remaining oil (or butter). Replace towel and lid and continue to cook over low heat for 30 minutes.



Tahdig with Potatoes

Ingredients

1. large potato
2. Vegetable oil
3. Pinch of salt

Directions:

1. Make White Rice as in directions above through Step 4.
2. Place skinned thin sliced potatoes into bottom of saucepan after adding oil (or butter).
Add salt
Add rice
3. Place a clean dishtowel or paper towel over the saucepan and cover firmly with lid to prevent steam from escaping. Cook for 3 minutes over high heat.
4. Remove lid and towel. Drizzle rice with remaining oil (or butter). Replace towel and lid and continue to cook over low heat for 30 minutes



Regular Tahdig (Crusted Rice)




Egg Yolk and Yogurt Tahdig (Tahchin)

Ingredients

- 1 large egg yolk
- 1/4 cup plain yogurt
- 1/2 teaspoon ground saffron dissolved in 2 tablespoons hot water (optional)
- Pinch of salt

Directions:

1. Make white rice as in directions
2. In a medium bowl, mix together egg yolk, salt, yogurt and saffron.
3. Add 2 cups of rice stirring to combine.
4. Place mixture on the bottom of the saucepan in hot oil then add the rest of the rice on top.
5. Continue white rice directions
